All year. Grown in Jamaica, ginger is a gnarled and knobby root with tan skin and pale yellow-green to ivory flesh. Widely used minced, grated and ground in Asian and Indian cooking, it has a peppery, slightly sweet-hot taste and a spicy fresh fragrance. Ginger is the key flavor in Ginger Ale, Ginger Beer and Gingerbread. It is also popular in many savory dishes and desserts. Peel before using. STORAGE: Choose mature ginger with smooth skin. Wrinkled skin may indicate the root is dry and older. Fresh unpeeled ginger will keep refrigerated for at least a week and frozen for 2 months.
