All year. Pear-shaped chayote has pale green smooth skin and firm texture. Similar to cucumber and zucchini in taste it may be eaten raw or cooked. Chayote does not need to be peeled unless skin is tough. The seed is also edible and has a nutty flavor. Steam or bake whole or chop and add to soups, sautes, or stir-frys. STORAGE: Choose blemish free squash with hard, skin. Tender skin indicates immaturity or poor quality. Unpeeled chayote keeps for up to 2 weeks when wrapped lightly in a plastic bag and refrigerated.
